Mediterranean-Inspired Pasta Salad

 

This refreshing pasta salad is loaded with flavor and nutrients! It’s an easy-to-prep meal or side dish that’s balanced with protein, fiber, and healthy fat and rich in antioxidants, like vitamin C, zinc, iron and prebiotic compounds.

I love this recipe because it involves little cooking (just the pasta) and saves well in the fridge for a few days (if you have any left!) I honestly think this pasta salad tastes better the day after the flavors have had time to marinate. Enjoy!



Ingredients

  • 1 lb dry whole wheat pasta, cooked 

  • 3 Persian cucumbers, sliced

  • 3 tomatoes, diced 

  • 1/2 small red onion, thinly sliced

  • 2 cups baby spinach, coarsely chopped

  • 1/4 cup fresh basil, chopped

  • 1 large roasted red bell pepper, diced

  • 1 large avocado, diced

  • 1 can of chickpeas, rinsed

  • ¼ cup feta cheese crumbles

  • 1/2 cup of canned artichokes, chopped (optional)

  • 1/2 cup kalamata olives, diced (optional)

  • 1/2 cup Primal Kitchen's Greek Dressing



Instructions

  1. Cook pasta according to instructions, drain and rinse with cool water, and pour into an extra large serving bowl.

  2. Prep/chop all the veggies, adding to pasta bowl.

  3. Drain and rinse chickpeas, then add to pasta bowl.

  4. Pour dressing over pasta salad and mix well.

  5. Store in refrigerator. Serve chilled.
