Mediterranean-Inspired Pasta Salad
This refreshing pasta salad is loaded with flavor and nutrients! It’s an easy-to-prep meal or side dish that’s balanced with protein, fiber, and healthy fat and rich in antioxidants, like vitamin C, zinc, iron and prebiotic compounds.
I love this recipe because it involves little cooking (just the pasta) and saves well in the fridge for a few days (if you have any left!) I honestly think this pasta salad tastes better the day after the flavors have had time to marinate. Enjoy!
Ingredients
1 lb dry whole wheat pasta, cooked
3 Persian cucumbers, sliced
3 tomatoes, diced
1/2 small red onion, thinly sliced
2 cups baby spinach, coarsely chopped
1/4 cup fresh basil, chopped
1 large roasted red bell pepper, diced
1 large avocado, diced
1 can of chickpeas, rinsed
¼ cup feta cheese crumbles
1/2 cup of canned artichokes, chopped (optional)
1/2 cup kalamata olives, diced (optional)
1/2 cup Primal Kitchen's Greek Dressing
Instructions
Cook pasta according to instructions, drain and rinse with cool water, and pour into an extra large serving bowl.
Prep/chop all the veggies, adding to pasta bowl.
Drain and rinse chickpeas, then add to pasta bowl.
Pour dressing over pasta salad and mix well.
Store in refrigerator. Serve chilled.
