White Bean, Kale & Avocado Salad (Erewhon Dup)

If you’ve visited Erewhon in Los Angeles, there’s a good chance you left with something from their fresh food bar. Tbh, the only reason I go to Erewhon is to pick up food from their fresh food bar. The first time tried their White Bean, Kale & Avocado Salad, I was hooked! I was impressed with the softness of the kale, the right ratio of white beans to greens, big chunks of creamy avocado, subtle crunch of seeds and a lovely light dressing that was not overpowering.

I finally got around to testing out some dup recipes and made some adjustments to my personal preference. Hope you enjoy!

Ingredients

  • 1 10-ounce bag of pre-washed kale

  • 2 ripe medium avocados, diced into larger cubes

  • 2 cups of canned white beans, rinsed

  • 1/3 cup hemp seeds

  • 1/3 cup pumpkin seeds

  • 1/3 cup of extra virgin olive oil, divided

  • 2 large lemons, juiced

  • 1 tbsp maple syrup

  • 2 tsp dijon mustard

  • 1 garlic clove, minced

  • Sea salt

  • Ground black pepper

Instructions

  1. Pour kale into a large bowl, add a pinch of salt and 2 tbsp of extra virgin olive oil to massage kale.

  2. Add white beans, avocado, hemp seeds and pumpkin seeds to the bowl.

  3. Make the dressing by whisking together the remaining extra virgin olive oil, lemon juice, maple syrup, dijon mustard, garlic and pinch od sea salt and black pepper.

  4. Toss salad with the dressing until all ingredients are evenly distrubuted.
