No-Bake Carrot Spice Bliss Bites

Ingredients

½ cup cashews

½ cup walnuts
1 cup shredded coconut (set aside ¼ cup for last step)

¾ cup grated carrots (1 large carrot)

12 Medjool dates

1 tsp vanilla extract

1 tsp cinnamon 

¼ tsp ground ginger 

¼ tsp cardamom 

½ tsp salt


Instructions

1. Using @nutribullet food processor, insert thin shred blade and load whole carrot into the feed chute on low setting.

2. Add cashews, walnuts, coconut, cinnamon, ground ginger, cardamom, salt into the work bowl then pulse until fine. 

3. Add dates and vanilla extract into the mixture and pulse until it forms a sticky dough.

4. Transfer to a bowl and set in the fridge for 15 minutes until it gets firm. 

5. Using a tablespoon, scoop mixture into palms of hands to roll into balls. 

6. Roll in shredded coconut and sprinkle with cinnamon. 

Makes approximately 18 bites.
